Perhaps Chex Mix is more of a holiday or a party staple...but this particular recipe is pretty darn easy and is always a hit. My co-worker did me a huge favor today so I wanted to make her a batch of this as a Thank You. Here's the recipe if you ever want to try it out yourself....you'll be happy you did!
AUNT TOOTIES SNACK MIX
1 Box Corn Chex Cereal
1 Large Bag Regular Fritos
1 Can Cashews
1 Disposable Aluminum Roasting Pan (easy clean-up)
2 Cups Brown Sugar
1/2 Cup Light Karo Syrup
1 Cup Butter
Put Fritos, Chex, and Cashews in roasting pan and set aside
Cook brown sugar, butter, and syrup over medium/high heat until a rolling boil. Let boil for 1 1/2 minutes.
Pour syrup mixture over Fritos, Chex, and nuts. Stir to coat.
Cook @ 350 for 8 minutes. Stir. Cook another 8 minutes.
Spread onto waxed paper. Separate and cool.
